Dorito Casserole

Prep time: One hour, or 15-minutes, depending upon rice used.

Servings: A few.

Ingredients:

1 cup wild rice (preferably, but can use any type of rice)
1 can cream of mushroom soup
2 cups water
3/4 pound burger or chorizo (Elk chorizo preferable)
1 cup sour cream
1 small bag frozen corn
2 cups grated sharp cheese
1 party-size bag Nacho Cheese Doritos

  1. Crockpot slow-cook the rice. 1 cup rice, can cream of mushroom soup, and 2 cups water, slow cook on low heat for 4ish hours. (*otherwise, prepare rice with cream of mushroom soup right before meal time).

  2. Pre-heat over to 350. In mixing bowl, add rice, burger (brown burger in cast iron fry pan before), sour cream, corn, grated cheese. Mix that shit up. Put it all in baking pan/dish. Crunch of a generous amount of Doritos on top.

  3. Bake that shit. Bake covered with foil for 20-min, then remove foil and bake for another 5-10 min, depending how crispy you want the Doritos :)

Serve with some spicy salsa. Great as a leftover for breakfast, with fried egg on top.
